Tasting notes:
Bright intense ruby red that darkens into garnet after time. Full persistent aroma with over-ripe tones of Marasca cherry on a lovely cascade of vanilla and floral violet hints. Dry, harmonic velvety smoothness of tannins, notes of pepper and dark chocolate
Suggested food pairings:
Sublime with red meats, roasts and ripe cheeses. So structured and aromatic, this wine can be drunk on its own

Vinification process:
The grapes ferment on the skins for 15-18 days at 25°-28° C. This allows an excellent extraction of anthocyanins and tannins. The malolactic fermentation takes place in stainless steel
Aging:
In medium toasted French oak barrels of 225 liters for 12 months. The wine rests for 3 months in the bottle
Aging resistance:
7 years
