Vinification process:
After a grape selection in the cellar, the bunches as crushed and the must is left to ferment at a controlled temperature of 27°C. The maceration on grape skins continues for 10 days and the malolactic conversion takes place when the wine has already been put into the barrel
Aging:
At least 18 months in 25-50 hL oak barrels + 6 months in the bottles
