Tasting notes:
Full floral notes paired with peculiar red and black fruit aromas. For one side, the long maturation in concrete tanks preserves the varietal and terroir characteristics intact and, on the other side, the short aging in oak barrels confers more elegance and fullness
Suggested food pairings:
Perfect with tapas and appetizers, but fits also for more complex meals like pasta, white meat, legumes, and cheese of medium intensity
Temperature of service:
14-16°C. Decant 15 minutes before serving
Location of the vineyards:
Villamanta, Vinos de Madrid Denomination of Origin. The 50 years old vine is planted in a siliceous soil
Vinification process:
Alcoholic fermentation at low temperature. Malolactic fermentation is performed under controlled conditions. Post-fermentation maceration
Aging:
10 months in small concrete tanks and 3 more months in French oak barrels
