4.200 plants per hectare (Sagrantino), 2.900 plants per hectare (Montepulciano)
Vinification process:
Each vineyard and variety is vinified separately.Destemming and crushing followed by a 6 days fermentation at controlled temperature (28°C) in stainless steel tanks. The maceration lasts 10 days for the Montepulciano and 18 days for the Sagrantino. Both varieties undergo a natural malolactic fermentation in stainless steel vats
Aging:
18 months in medium toasted French tonneaux + 18 months of refinement in the bottle
Aging resistance:
20 years
