Location of the vineyards:
Arganda, Vinos de Madrid Denomination of Origin. The vine is planted at 750 meters above the sea level in a lime soil, rich in red clay
Vinification process:
After destemming and crushing, the grapes undergo a prefermentative maceration at low temperature. Once the must is clean, slow fermentation takes place in small concrete tanks at 12-14°C
Aging:
80 days on its own fine lees
